Remember the Pork Colombo

So many MANY Easters have gone by since the first taste of this fantastic Caribbean dish.


From that first time we tasted it, (thank you Steve!!) we knew it would be PERFECT to feed our Feaster Easter guests on Saturday night. And, let's just say, I don't remember the furnace needing to run much that night. I'm betting we were all kinds of 'fired up' for the Easter Bunny Sunday morning.

Aaaah. . . the memories. . . . And so grateful for Hubster, his smoker, and his amazing Smoked Ham!

I could rewrite the recipe here, and seriously planned to, but I decided it would be much more fun to jump back in time and read the Original Blog Post from 2010. It was not the first time we had enjoyed or made this dish, but was just as delicious as though it was.
